Turn Leftovers into Party Snacks

Sometimes student life can be challenging…especially for your wallet. We have all experienced those days, where staying in is probably the best or only option you have.

One of the perks of living at OurCampus is that your friend(s) may be just a door away, which means staying home on a Friday night can be more entertaining than going out!

With a bite to eat accompanied by your favourite drink, TGIF might get a completely new meaning.

EAT SMART & SAVE

Eating out and ordering may be the fastest, but is also the most expensive way to enjoy a Friday night at home. According to Studyportals Maters the average Amsterdam student spends € 170 on food every month. Preparing simple and fast snacks instead, will benefit your financial situation and be a sustainable decision as well! According to European Commission over 88 million tonnes of food are thrown away and wasted every year!

So, preparing a light meal from ingredients left over in your fridge is a small action that could make a huge difference.

Whether you decide to invite some friends to your urban home, or watch Netflix and chill on your own, these 20-minutes snacks will make your afternoon or evening delightful.
Try Midnight Pizza for a quick bite, Tortilla Party for a nibble, and Apples in Disguise when you are craving something sweet.

1. Midnight Pizza

What you need:
– Naan Bread
– Tomato sauce (or tomato purée)
– 1 Onion
– 1 Red Pepper
– Pizza cheese or mozzarella
– Chopped cooked chicken, ham or salami
*If you are a vegetarian replace the meat with sliced zucchini.

1, 2, 3 – COOK:
Spread tomato sauce or tomato purée over the naan bread and top it with chopped onion, red pepper and your preference of zucchini or meat. Next, add your cheese of choice and pop it in the oven to bake for 20 minutes on 180°C/200°C – until the cheese has melted and the edges of the bread turn golden-brown.

2. Tortilla Party

What you need:
– Tortilla or stale pitta wraps
– Olive oil
– Sea salt

For the dip:
– 1 Greek-style yoghurt
– 1 Lime
– Sea salt
– Black pepper
– Red pepper
*Chilli

1, 2, 3 – COOK:

Break the tortilla or pitta wraps into small pieces, drizzle them with some olive oil and sea salt, and bake them in the oven (180°C) until their edges turn golden-brown.
You can eat them instead of chips or add the dip by mixing Greek-style yoghurt, lime juice, salt, black pepper and a quarter of chopped red pepper. If you want to spice it up, add some chopped chillies.

3. Apples in disguise

What you need:
– Apples
– 125g of White flour
– ¼ L of Milk
– 1 spoon of sugar
– Salt
– Drying oil

1, 2, 3 – COOK:

Peel and slice the apples horizontally to obtain round slices. Mix flour, milk and sugar in a small bowl until smooth. Preheat the frying oil in a small pan, dip each apple slice in the prepared mixture, and fry until it turns yellow.

With a touch of creativity, cooking from leftovers becomes a fun and easy activity. But another way of getting rid of uneaten food, is to share your meals with others. Prepare some fast and healthy snacks to share on the next Movie Night or dinner party. In your 21st century urban student home – the possibilities are endless!
